Abstract

The postcard shows callaloo which is a distinctly Caribbean dish which was created by the enslaved Africans. In Trinidad is made with leafy vegetable or "callaloo bush" as it is refered to locally, coconut milk, seasonings such as chives, garlic and thyme and hotpepper. Different types of meats such as beef, chicken or seafood such as crab is also added to the dish. A recipe for the dish is printed on the back of the postcard.
